I don't do this very often, because it usually takes out a big chunk of time. (I'm slow.) Sometimes, though, I just feel like Photoshop'n!
Digital scrapping is not that much different from paper scrapping - most of your time is spent finding the right photos, papers and embellishments! I don't ever print the pages out, but I do like sending them to friends and family. It's an easy way to share my "scrapbooks" with others.

This is really a nice layout and looks so real. It is amazing what we can do digitally...but I think I would miss the inky fingers and the messy desk! Is that you fiddling around in the picture?
